Isn't that the craziest little piñata you've ever seen? Happy Cinco amigos! We love horchata. Whether we make it ourselves or get it at our favorite Mexican restaurant, it is definitely one of our favorite drinks around here. So! I am sharing a super easy recipe to make your own for Cinco de Mayo! 

2 C milk - any kind you like

1 C uncooked, long grain white rice

5 C water

1 TB vanilla

1 tsp ground cinnamon

2/3 C sugar

Combine the rice and water and let it sit for about an hour. Next, blend them for about one minute and strain the rice out with a mesh strainer. Add the other ingredients, stir well and let it chill for a while in the fridge. Serve cold with some churros and chocolate sauce!

ALPHABET FUNNEL CAKES DIY

When we went to the fair last week, we decided against the $7 funnel cakes. $7! Sheesh. Instead, I thought we could make our own at home and make them even more fun! What's more fun than learning while snacking? These funnel cakes are crunchy goodness on the outside and fluffy heaven on the inside. This is more of a recipe than a DIY, but you know how it is. Here's what you'll need:

1 Egg
2 C Milk
1 Tsp Vanilla
2 C Flour
1 Tbs Baking soda
1 Tbs Salt
1 Tbs Sugar
1/2 Stick of Butter
Powdered Sugar (to sprinkle)

First mix the wet ingredients in a mixer, then slowly add the dry ingredients till you have a nice smooth batter. Next, melt your butter and fold that into the batter. It wouldn't be worth eating if it didn't have butter, right? While your butter is melting, now is a good time to heat up your oil. I used coconut oil (yum!) but you can use whatever kind you like. Once your butter is folded in, pour your batter into a squeeze bottle. I know these are called funnel cakes, but ours our squeeze bottle cakes. Once your oil is nice and hot, start squeezing out your letters! Let them cook for a minute on each side (until golden brown) and set them out to dry. Once their all done, sprinkle on some powdered sugar and enjoy! It's a lot of fun and really doesn't take very long at all. Elliott loved recognizing and then promptly eating the letters. These would be really fun to have at a circus or ABC themed birthday party too!

DIY MINI COOKIE CAKES

These little "cakes" are unbelievably easy to make and oh so delicious. And did I mention they're mini? They aren't terribly sweet. Kind of one of those "oh, that was just right" type of desserts. You know the kind. Here's how you can make your very own for your next get-together.  

Recipe:
2 Cups Heavy Whipping Cream
Sugar - to taste
Chocolate wafer Cookies
Vanilla - 1Tbs

Mix the whipping cream on high until it starts to thicken. Then add the vanilla and sugar and keep mixing till it's a little fluffy and plenty mixed.
 Use the wafer cookies like layers of cake. Make them as tall as you want!
 Then frost the outside. They don't have to be that pretty. They make up for it in taste.
I like to take a wafer and break it in have then rub the pieces together to create a cookie dust on top of each mini cake. It seems fancier for some reason. Now put them all into the fridge for a few hours. While they are in the fridge the frosting soaks into the cookies making them soft and more cake like. Amazing, right?
 Now serve them up and enjoy!
